Our gourmet decaf coffee is processed with a 'natural' or water process system. Both are better for the environment and healthier for you
About Fair Trade & Social Justice Fair Trade is a social-justice-based movement that helps the poorest coffee growers with direct economic support. The movement does a lot of good. All of our blended coffees contain a blend of Fair Trade certified coffees. We also purchase coffees from growers who provide key social, educational, health and housing services for their workers. Examples include:
- San Rafael de Narajos. This cooperative in El Salvador provides vital housing, electricity, education and medical services to its members and their extended families.
- Hacienda La Minita. Probably the best-known, high-quality coffee estate in Costa Rica. They provide housing, education, medical services and protection to their workers while turning out one of the best coffees in the world. It's their commitment to their people which results in the quality in your cup.
If you want to do more good, buy better quality coffee. Your 'investment' will speak, and help move the entire coffee supply chain to value quality. Then everyone will win.
If you have further questions about a specific coffee, don't hesitate to call our roaster during Seattle business hours (206.963.6707).

Coffee on the bush looks like ripening cherries. The best flavor and grower price comes when only red cherries are picked. This can take as many as five different pickings. Beans are then processed to remove the pulp. Once dried, they must be graded and sorted to increase quality and price. Each lot of coffee is litierally tasted and inpsected to determine a selling price.
We are buying 'fairly traded' specialty coffees that sell at a premium of $0.50 to $3.00 above market prices. Certifications include Fair Trade and:
ORGANIC is growing in demand but it takes five years for a field to be certified. This is no easy task as coffee requires intense fertilization. Our coffee is certified by the Washington State Department of Agriculture to standards established by the US Dept. of Agriculture.
Green coffees grown at HIGHER ELEVATION, and in SHADE command higher prices. These bushes create a denser bean cell structure with more complex sugars. If you were to cup two coffees from low and high elevations grown on the same mountain side, you would taste the difference too!
Knowledgable coffee buyers are aware of these factors. They cup (sample) the coffees before buying because even the processing can make the coffee better or ruin it. (So can shipping).
